Hello everyone! So I was literally just finishing this up this morning and thought, why not share the recipe with you? Not only is it super quick and easy, but it is also full of good nutrients (fiber, magnesium, protein, omega-3s, manganese…) and antioxidants! True, I had this for breakfast, but you could have it as a snack, or anytime of the day, really.
INGREDIENTS
- 3 Tbsp. of chia seeds
- 1 cup of water or plant milk (I have used coconut milk)
- 1 apple (or any other fruit of choice)
- 3 pecans (or any other nut)
- 1 tsp. coconut oil
- 1/2 tsp. of stevia sugar (or any other sweetener of choice)
- Some cinnamon powder
INSTRUCTIONS
- Put the chia seeds into a cup.
- Add the milk and then using a fork or spoon, stir really well so that the chia seeds aren’t sitting at the bottom.
- If you are in a rush, let it sit for 5 minutes and then place in the refrigerator for around 15-20 minutes. However, if unlike me, you are good planner, let it set for a few hours or even overnight. The longer, the better to maximize this superfood’s benefits!
- While you wait for the chia seeds to soak, put a bit of coconut oil in a pan and then add the desired sliced fruit and nuts. Sprinkle some sugar and cinnamon on top and then sauté for a couple of minutes over low – medium heat. Et voilà, bon appétit!
